Let’s just call it the fit quickie food of the day. Long on comfort an color and short on ingredients list. Just the way I like it. This is how I eat. Pick a starchie, pick a veggie, play around with toppers. Even think outside the box and make a sauce out of corn!
Quinoa, Cauliflower, and Creamy Corn
Quinoa: cook in the rice cooker, 2 parts water to one part quinoa
Caufliflower: stir-fry 1/2 head cauliflower cut in to pieces in vegetable broth with chunked onions
Creamy corn: blend in food processor or blender until the consistency you like
1 – 16 oz bag of frozen corn, cooked
2 Tablespoons nutritional yeast
1 teaspoon white miso
enough water or vegetable broth to make it to your liking
Heap on your plate and snip fresh dill on the top. Rainy day dinner like none other.

i use white qunioa and soy milk so it makes it lovely and creamy
