You hear the reports on increasing incidences of disease – and death by disease – and it can’t help but register fear in our hearts.

Yet you, my dear, smart reader, already know that you can make a big difference in your health simply by what you put on your plate and into your mouth. As a matter of fact, most of my readers are ahead of the curve on this one and can join me in celebrating the popular media finally catching up a little with what you’ve known for years.

Now more than ever, science suggests that by make 3 changes in your diet you can dramatically decrease your chances of suffering from cancer or heart disease.

That by eliminating certain edibles from your plate, you can prevent disease and build health with your fork instead of having to resort to surgery – with a knife.

Forks Over Knives

The details are being brought to light – and life – in a brand new documentary film, Forks Over Knives, written and directed by Lee Fulkerson.

Diabetes, high cholesterol, high blood pressure, obesity – yes, we can handle them to some degree with pills and knives.

And ain’t it interesting that there are those who say ditching dairy, processed foods, meat, and oils is “extreme” yet don’t use the same adjective to describe stints (blocked arteries), amputation (complications from diabetes), and open heart surgery (heart disease – again), and meds up the wazoo?

Featuring key players in the Plant-Strong Diet force, including Dr. Neal Barnard, Dr. T. Colin Campbell, Dr. Caldwell Esselstyn and Rip Esselstyn of Engine 2 Diet fame, the illustrious Dr. John McDougall,  Pam Popper and others, Forks Over Knives  describes in simple terms how changing what you eat can change your life.

The Film Director’s Dramatic Personal Results

Curious as to what personal results he would get, Forks Over Knives director Lee Fulkerson switched to a plant-based diet himself .  Over a 12 week period, these are the dramatic changes he experienced.

Before/ After 12 weeks

Weight: 231     /     211

Blood pressure: 142:82 / 112:70

LDL     cholesterol (optimal below 100)         157/      80

Crp (C-reactive protein) 6  (optimal 3 or less)          6/       2.8

Fulkerson used zero medications in the process. The only changes were a switch to a whole-foods, plant-based diet.

Diet and Disease

This film couldn’t have come at a more serendipitous time for me;  I’m at exactly the halfway point of my studies through Cornell University to obtain my Plant-Based Nutrition Certification.

Over and over again the data points to the steel-hard chains linking diet to disease.

  • high protein diets (20% of calorie intake)  linked to proliferation of cancer cells.  But only animal protein – plant-source protein has not shown the proliferation effect.
  • high fat diets (20% calorie intake, even less than that) linked to acceleration of heart disease and diabetes
  • deficient fiber diets (animal product have NO dietary fiber, and most Americans get a pathetic 10 or less grams of fiber a day – we should be aiming for 40 or more) have a high correlation with colon and other digestive and elimination tract cancers

The Major Offenders

Here’s the dietary big 3:

  1. animal protein, including meat, fish and poultry as well as eggs and dairy products (see Perils of Dairy)
  2. processed carbohydrates
  3. expelled oils

A plant-based, or plant-strong diet, by contrast, is just that. The calories provided by the diet come primarily – and in many cases completely – from plant sources.

The New 4 Food Groups

We think in terms of the new four food groups:

  • vegetables
  • fruits
  • whole grains, and
  •  legumes.

Sprinkle in a few nuts and seeds. And you’re there. With all the nutrition you need for a healthy, trim body.

Seeing as we currently are raising the first generation of children that may live less years than their parents due to the proliferation of diet-related diseases, this film underscores the need to sit up and take notice.  To clean up our plates. Minimize and even eliminate the major offenders. It’s never too late to reverse your own disease destiny.
